Kitanishi Sake Brewery Co., Ltd. is a long-established sake brewery founded in Ageo City, Saitama Prefecture in 1894 (Meiji 27). The founder, Mr. Kamekichi Nishishi, started brewing sake using the high quality underground water that gushes out from Chichibu. In 1904 (Meiji 37), it moved to Kamimachi, Ageo City, and developed as a post town along the old Nakasendo. The main brand "Bunraku" is named after Bunraku, a traditional Japanese performing art. Just like the art created by the trinity of Gidayu, shamisen, and puppeteer, rice, koji, and water come together to create the sake that expresses the passion that goes into it. The sake produced by Kitanishi Sake Brewery uses medium-hard water from Chichibu and is characterized by its light taste. While respecting tradition, since the Heisei era they have been experimenting with new things such as the development of sparkling sake and liqueurs, and even the challenge of brewing kimoto. Beyond sake brewing, we also manufacture seasonings such as amazake and salt koji, and develop cosmetics. We are also actively exporting sake overseas and spreading the word about Japanese sake culture to the world. Its activities, which are spreading both domestically and internationally, symbolize the challenge of Kitanishi Sake Brewery, which combines tradition and innovation.
